May is a great time for Foraging

May – What a great month for foraging. We have found nettles,  great in soups and tarts. Common Hawthorn –  use the young leaves in salads, but when the haws come through they make a great jelly or wine. I cannot wait for the elderflowers, everyone who knows me, knows that every year, I make elderflower cordial and flavour jellies, creams, cakes and drinks with it. If I get the time, I make elderflower champagne. When I took my bottles around to a friend’s champagne party last year, we tried around five bottles of champagne and most of the girls preferred mine. Well, they were my friends after all and after many a glass of champagne everyone tastes good!!!!!!!
