My Blackberry Crumble Cake Not dis-similar to a strusel cake. The recipe can be used with any soft fruits. Ingredients: 1 1/2 cups all-Plain flour 1 teaspoon baking powder 1/4 teaspoon salt 1/2 cup sour cream 4 ozs butter, softened 3/4 of a cup of granulated sugar 2 large free range eggs 1 teasp vanilla Extract 1/2 cup sour cream 3 cups blackberries Streusel Topping 1/2 cup light brown sugar 3/4 cup plain flour 1/2 teaspoon ground cinnamon 5 tablespoons melted butter 1/4 teaspoon ground nutmeg
Heat oven to 350°. Grease a 9-inch spring round baking dish. Mix the flour, baking powder and salt. In a mixing bowl, cream the 4 oz of butter with the sugar, mixing in the eggs until light and fluffy. Beat in the vanilla and cream. Now slowly beat in the flour mixture until blended. Spread the mixture in the prepared pan. Top with the blackberries.In another bowl, combine the sugar, flour, cinnamon, nutmeg and the butter. Mix with your fingers, so the mixture resembles crumbs and sprinkle it evenly over the blackberries. Bake for 40 minutes, or until set and lightly browned. When cooled remove the sides of the tin and cut and serve with double cream or custard. Most importantly Enjoy!
