Love Food Hate Waste – A cooks guide to using up your leftovers.    I will be publishing many new recipes for using up your leftovers and I hope you will join me and post your favourite ways of using up food.  Yesterday, the family sat down to a delicious Sunday lunch, but we cooked too many vegetables!  The following recipe is a great way of using up leftover vegetables and the children love them.   You can shallow fry or bake these patties.            Vegetable Patties

1)  Place your vegetables and around a third of a cup of fresh coriander in a food processor. 

2)  Now scoop out into a bowl and add half an egg, salt and pepper to taste and a little spice.   

3) Add 1 dessert-spoon of flour and mix. Take a spoonful of the mixture and with floured hands mould into patties.  Chill in the fridge for 30 minutes.

4)  Now shallow fry in batches for a few minutes on each side or place on a greased baking tin in the oven on Gas mark 8, 450F for approx 20-30 minutes.

5)  When cooked serve with freshly squeezed lemon juice on a bed of Coriander leaves and a whole fresh or pickled chilli or some thick yoghurt.
